Where are the instructions for wiring?

Afternoon Will,
You should have two wired to illuminate the gauge, they go to the back of the bulb. One of these should piggyback off one of your dash illumination lights, the other to earth.
Then you need a switched positive (goes live when the ignition is on) That goes to the + terminal. A second earth is needed for the - terminal and a wire from your VDO oil pressure sender to the S terminal on the back of the gauge.
